Baking

I always wonder how can you make eggplants tasty...I mean eggplants are tasty but if you use it to cook Chinese dishes, you might need a lot of oil to keep its colour. Or I like to grill eggplants for salad. This baked eggplant dish is soooooo delicious, maybe because of the cheese? ;) With tomatoes and zucchini, it is so healthy, super easy to make. Perfect for appetiser or even main dish. Hope you like it too!
