Happy Champagne Day! Yup, that's today. At least that's what I've been told. I was always under the impression that Champagne Day was December 31, but I'm just as happy to celebrate at the end of October when there's not so much going on. Two Champagne Days is not something I'd dare argue with. Plus, it just so happens to coincide with Cocktail Friday, so it's almost like the stars have aligned. I'm celebrating with prosecco, which, I know, is not champagne. But it's what I had on hand and I decided it was close enough. This recipe is perfectly
