If you can’t find Granny Smiths, choose another firm sweet-tart apple, such as Pippin, Rome Beauty or Jonagold for this apple fritter recipe. If you don’t want to go to the trouble of making the glaze, you can simply dust the finished fritters with confectioners’ sugar.
