Apple Risottos are unusual and delicious. One of my favourite is this Caramelised Apple Risotto from Healthy Recipe Ecstasy. In this Beetroot & Apple Risotto I have paired two Autumn and Winter fruit and vegetable that go so well together. This risotto is very tasty and colourful. Perfect for a colder Autumn evening.
