This delicious rhubarb cake makes a nice change from a pound cake. The addition of seasonal rhubarb makes it quite fruity. I took inspiration from Nigella Lawson’s Madeira Cake (from How To Be A Domestic Goddess) and added my own twist. Make sure it is fully cooled before serving.
