Ragout and stew

I have recently just come back from spending three glorious weeks in Sierra Leone. The sort of glorious weeks which involved, amongst other things, me watching my aunt’s whip up amazing African dishes over coal-powered fires. I also had the chance to see them use familiar cooking tools like a mortar and pestle, for making simple dishes like an African jollof stew.
