This fish supper is simple to prepare. The herb sauce can be made with many different fresh herbs such as basil, tarragon or chives. <br /> <br />As long as fish is fresh, it's delicious and uncomplicated. An elegant dinner can be had by baking some potatoes and pairing them with this dish. Once the potatoes are almost done baking, the fish is put into the oven to cook. A green salad, peas or steamed green beans are great sidekicks too. There will be extra herb sauce to toss into the green beans or peas if you desire. <br /> <br />It takes under 30 minutes to make the fish and the sauce. If you want to make your life even more stress free, you can make a green bean salad ahead of time. Cook some green beans until bright green. Toss them with a little fresh lemon juice, olive oil, sea salt and pepper. Once they've come to room temperature, place them in the fridge. Take them out of the fridge and bring them to room temperature when you're ready to serve the fish. <br /> <br />Serve the fish with a couple of spoonfuls of herb sauce over the top, additional lemon wedges, a drizzle of good olive oil and a sprinkling of gray salt or flaky sea salt. <br />
