I’ve never been a fan of traditional chicken alla cacciatore – something about chicken and tomatoes together doesn’t appeal to me – and I recently learned, neither was my maternal grandpa. Rocky came to the U.S. from Italy as a boy and sadly died before I came on the scene. But I’ve heard lots of stories about him from my mom, including that he liked to braise chicken in sherry, hold the tomatoes (which may disqualify it from being a cacciatore, closer to marsala actually, but hey that’s what he called it). He used canned mushrooms, which I’ve swapped for shitake. I also added a shallot and a couple more glugs of sherry, but I think Rocky would approve.
