As fall approaches, I crave soup more often. And if you've been with me on this journey for any amount of time, then you already know this. French Onion Soup has always been a favorite of mine, but I can rarely order it while eating out, because it normally consists of a beef broth(that of which, I choose to not eat). So with this soup, I've used a veggie broth and stuck to some basic ingredients and I even threw some Butternut Squash that I think compliments this soup really well.
