I rarely post a recipe I have only made once, given how much I tinker with them the second and third time around. This one is the exception. I seem to have gotten it right the first time. <br /> <br />This was strongly inspired by the 2012 “caramelized onion and prosciutto mac and cheese” recipe from the Peace, Love and Low Carb site. <br /> <br />https://peaceloveandlowcarb.com/caramelized-onion-and-prosciutto-mac-and-cheese/ <br /> <br />I roasted the cauliflower instead of steaming it, added roasted red pepper to the onions, and used less prosciutto, but otherwise did not change much else. I also like the yellow cauliflower, which gives a richer looking meal. I am tempted to try this with a mixture of yellow cauliflower and romanesco. <br /> <br />Added note (04/01/2018): I made this again fully vegetarian, and used 10 thin slices of hard tofu pan-fried to crispy edged in EVOO, garlic and Sriracha (Rooster Sauce).
