Churros use the same pate a choux dough as eclairs. So I decided to make some miniature eclairs - piped with a star tip, to make them look more like churros - filled with a chocolate pastry cream spiced with cinnamon and chipotle and coated with cinnamon sugar. This makes a very spicy pastry cream, so decrease the spices if you prefer more of a subtle kick!
