One of our favorite ways to eat kale or potatoes for that matter is in Colcannon. <br />There are many versions of this tasty Irish Dish. After seeing a few recipes for mashed potatoes with horseradish in the Horseradish Contest I decided to add some horseradish to my colcannon. <br />Darby loved the little kick it added. <br /> <br />I always serve Colcannon on St. Patricks Day along with Corn Beef and Irish Soda Bread. But, we have it all year round with beef, pork and chicken. Then again, we have been know to eat just Colcannon for dinner.
