(Just a note: The photo only shows a small amount of the stew--the recipe will serve a crowd of 6-8 people )This is a favorite dish of my Peruvian hubby and since he especially requested it for dinner, I made it this evening. I used a large package of chicken breast cut into big 'fingers' and made enough with this recipe to serve 8 people! This recipe freezes well--just take out the potatoes (which will tend to become grainy if frozen)--it keeps for up to 4 months in the freezer. A vegetarian friend ate this dish without the chicken and loved it --the sauce is so rich and tasty it can be served without the meat, if you like!
