This is the result of stone fruit being on sale. I can't help myself, I go crazy and buy way more than I can eat. (Four pounds of cherries sounds amazing in theory, but when you try to eat them all by yourself you realize the error in your ways). Fortunately, I adore fruit crisps and, despite lacking a cherry pitter, I ventured forward into the unknown that became a remarkable cherry-peach crisp that tastes like my favourite parts of those little fruit cocktail cups my mom used to pack in my lunch when I was a good little girl... I also love it because I live by myself and it makes enough for me to eat during the week. Make this in a four-cup oven-safe bowl or multiply recipe to fit the appropriate baking dish.
