I'm currently obsessed with matcha (green tea powder), and have been putting it in everything I can. These sophisticated little cookies might be my favorite use yet. They're based on Dorie Greenspan's sables recipe, lightened up with cake flour and just a touch of baking powder. The result is a cookie that's rich and crumbly, yet melt-in-your-mouth tender, with a delicate but pronounced green tea flavor. You can bake them all at once, or refrigerate/freeze the dough for slicing and baking as you want.
