Grits with tomatoes over easy

I had heard about grits and people seem to be giving it a bad rap.It seemed the only way they'd have it is if it was smothered in butter and cheese. I decided to reinvent it and make it flavorful without relying on butter and cheese. So this is how this recipe was born and the wonderful thing about this recipe is it can be a canvas for you to build on. It is so flavorful as is, but you can top it with fried eggs, crispy bacon, sausage or cheese or all of these combined!
