Lobster & Creamy Basil Custard Timbale

<br />For 4 people you need :

<br /> 1 -1/2 lb Lobster -cooked and shelled
<br />Basil ( Thai or Lemon Basil best)
<br />
<br />1 oz butter
<br />
<br />¼ pint milk & 1/2 cup of cream
<br />
<br />salt and pepper
<br />
<br />¼ pint water
<br />
<br /> 2 tbl. flour & chopped parsley
<br />
<br />1, Cook Lobster in 1/4 pint milk w/ salt , peper, with Thai or Lemon Basil
<br />
<br />
<br />2. Strain off the milk and discard . 3.Then in a saute pan mix flour, butter, and cream to make custard sauce- finely chop Basil and add to the custard mix. 4. Once thickened blend in the courser chopped Lobster ( or cuisinart Lobster for smoother, creamier texture). Pour mixture into timbales or shaped small appetiser size molds. Refrigerate for 1 hr then turn out and serve.
