I'm pretty well addicted to miso-roasted eggplant and needed another way to scratch that itch now that eggplant season has ended here in central Texas. I decided to try the glaze (adapted lightly from http://iamafoodblog.com/oven-roasted-eggplant-with-caramelized-miso-recipe/ ) on roasted butternut squash instead, and was thrilled with the results. I further gilded the lily by serving the miso butternut in a weeknight version of a miso ramen and ended up with a recipe I'll make again and again.
