Several years ago my roommate moved her mother from Poland into our crowded NYC apartment for a month. I was livid at the time, but in hindsight, learning to make the perfect pirogi and these cookies was well worth the temporary displacement. <br /> <br />She had no recipes, but she made copious amounts of food, and I watched. This is my adaptation of her polish apple cookie. Buttery, sweet, fluffy--each cookie is a miniature apple pie that melts in your mouth and waxes poetic on nostalgic notions of home and comfort. You can eat them on their own or a la mode. These are best the first day out of the oven, but if your family/friends don't eat them all, you can store them in the fridge and enjoy for days.
