Sometimes the best dishes are made without thought in the heat of a kitchen frenzy. After a whirlwind 5AM supermarket dash, I pulled together odds and ends to make this roast, knowing I needed something hands-off but hearty for dinner. The results? One of the best meals my family has had in quite a while!
