Peanut butter banana sandwich cookies

I love a sandwich cookie when the cookie is tender, crumbly, rich but not too sweet and the filling is soft and creamy. Using powdered peanut butter, makes a perfect tender cookie. PB2 makes a powdered peanut butter with banana which is perfect in this recipe. Although, if unavailable in your area, substitute plain peanut butter powder. The filling is bursting with banana flavor as the banana is sautéed in butter first which brings out all of the flavor. These are not only incredibly delicious but beautiful as well.
