Not quite sure how I came up with this recipe, but it's great - quick, and chicken thighs are super inexpensive. I also tend to spice this differently every time I make it, but it works well with just salt, pepper, and some garlic. (yum garlic!) It also really helps to have a cast iron pan for this recipe.
