Long gone are the Sundays I would awaken to the aroma of my father's magnificent and simple pancakes on the griddle. This is a decadent revamp of my dad's fabulously savoury pancakes. He made great crisp on the outside, fluffy on the inside, unsweetened pancakes for me every sunday. This version sweetens up with pumpkin, and gets a silkiness from smooth whipped ricotta.
