As a kid, my favorite job when helping my mom make her Lasagne Bolognese was stirring the besciamella, and getting to lick the spoon when it was all done. This dish has all the flavors of traditional lasagna, but it’s much much quicker. Not much of a recipe, but it’s what we had for dinner tonight! If starting from scratch, make a good meat sauce, like Merrill's Weeknight Ragu, which you can find here in the archives. Also, double the rest of the ingredients and bake in a 9 x 13 pan, covered with foil for 20 minutes, then remove foil and continue baking until sauce is bubbly and Speck is crispy.
