Fluffy and moist thanks to the roasted and mashed bananas into the batter, these pancakes are a perfect weekday or a weekend morning breakfast. They are easy, and parts of the recipe such as roasting bananas and making the sauce can be made up to 12 hours ahead and then the batter comes together in no time. <br />Although this week’s contest’s theme is “Your Best Weekday Breakfast”, I would be very happy if this breakfast was on my plate on Mother’s Day <br />
