In grade school, I’m pretty sure there was a period of at least two months where I brought a peanut-butter-and-jelly sandwich to school every day. While I still love PB&J, I’ve become a little bit more creative with lunches in recent years. This roasted beet and spinach salad is a perfect law student snack, whether lunch is on the quad or in the library.
