This is one of the three versions I made of my super easy <a href="https://food52.com/blog/22742-how-to-make-roasted-fruit-tart-easy-summer-dessert">Roasted Fruit Tart</a>, but you can really use any fruit and any kind of cookie to make a tart like this! In this version, a classic combo of tangy raspberries and sweet peaches makes a killer (and did I mention quick and easy) summer dessert.
