I'm not using a French title to be fancy (though France is where I learned to love this dish), it's so people won't be put off by kidneys! I don't know why some folks get so squeamish about these "parts", if you're going to eat meat, night as well eat the whole animal right? (not least because it's delicious). Okay, off my soapbox now. Please try this, it is seriously good.
