Root vegetable boxty
Boxty, known as “poor house bread,” is simply a potato pancake. Traditionally boxty is made with grated potato, onion, buttermilk and flour – give or take a few ingredients. I decided take this dish a step further and use a variety of root vegetables and sautéed kale.
