This is a riff on salt and vinegar potato chips. I'm not a fan of mayo so I'm always experimenting with vinegar based potato salad. This is my favorite version so far. One note of caution - when you are boiling the potatoes in the vinegar you might want to open an window or turn on the fan. It can get a little potent. - melissav
