I adore green onion pancakes but they often require the need to create a dough. Since I create recipes for parents that are exciting their kids to love fruits and veggies, I always look for ways to make the recipe quick and dirty and seriously yummy, which is why this green onion pancake uses a short-cut of the already made pancake batter from Bob's Red Mill. I have to live gluten free, so this is also a GF recipe that feels like it's gluten love and savory sumptuousness. We also add a little drizzle sauce to kick it up one more notch! PS: we thought the sour cream on top could be optional but we highly recommend it not be.
