Slow roast tomatoes

What do you do with hard bite tomatoes that do not ripe? You roast them with salt/brown sugar/fresh or dry herbs/Oil and lots of love. Blend it=tomato sauce. Mix it with feta cheese and orzo=yummy summer salad. Either way, wear them in on chin for a happy ending!
