S'mores brownie ice cream sandwiches

The ultimate mash up of s'mores, brownies, and ice cream sandwiches! For this creation, I baked graham crackers on top of fudgy brownies, inverted them, topped them with homemade toasted marshmallow ice cream (based off of the recipe from Baking Bites), and added another graham cracker on top. <br /> <br />For the brownie I just used a family-sized box mix, but feel free to use your favorite brownie recipe for a 9"x13" pan.
