My brother likes s'mores. My dad likes buche de noel. I like to challenge myself. California doesn't allow fireplace fires due to air pollution. We also forgot to put up the tree this year. The result? This s'mores buche de noel, complete with candy flames! <br /> <br />The sponge is adapted from Yolene Dabreteau's Blackberry and Almond Chantilly Cream Roulade. <br /> <br />Note: make sure your eggs are at room temperature, or they won't whip completely, and your chocolate should be less than 70% cocoa. I rolled mine from the short end, but you should be able to roll it for the long end if you want a thinner, longer cake.
