It's after Labor Day, so summer's supposed to be officially over, but I keep finding there's still amazing corn to be had. I'm not ready to let go of the summer warmth, but this crepe recipe puts the heat back even as the nights start cooling off. I'm not the best crepe maker, so mine definitely come out "rustic," but the spicy flavor is all there. The jalapenos give these crepes a fresh bite, and the paprika rounds out the warmth, leaving a nice building heat that starts in the back of your mouth. I particularly like these with a cool crab salad to take the edge off.
