My riff on the traditional Asian peanut noodles. I added bright vinegary veggies and fresh herbs to offset the richness of the sauce. The recipe seems a little complex, but the reward is an utterly addictive treat. Works as a vegetarian entree or as a great side dish for grilled chicken or shrimp
