From Rebekah Peppler's Apéritif: Cocktail Hour the French Way: Just before a summer storm, I met a friend for an apéritif at a café in between our apartments. We sat outside on those ridiculously French wicker chairs and watched the clouds roll in while sipping Suze Tonics. I wrote this recipe on the spot. (I’d like to say it was on a napkin, but c’mon, it was in my notes app.) In an easy twist on the standard G&T, subbing in assertive Suze adds an earthy, oral bitterness to the drink while also lowering the alcohol content (drink two!).
