Sweet potato beignet

Adapted from Gale Gand, "Gale Gand's Short and Sweet" by Gale Gand and Julia Moskin, these beignet may not be like the ones from Cafe du Monde but they do take me back to a short stay in New Orleans a few years ago. They're crispy on the outside and moist on the inside. I finished half with cinnamon sugar and half with confectioners sugar and I must say the cinnamon ones were my favorite!
