Tartine du quartier latin

This is a take on the street food of paris, simple but lovely baguettes with sliced egg and tomato with a handful of greens. I opt to use arugula because, well, it's just the best green around, and I created a tomato jam whose flavor is out of this world so that we can have this tartine year round, when fresh tomatoes are not quite in season.
