The inconvenient ragu-th

Using a technique (I call it "harvesting caramel") that I haven't seen from other mainstream cookbooks, except maybe practiced in Southern cooking, this is the most labor-intensive yet madly delicious ragu that I think every one should invest a Sunday afternoon in doing.
