I really love the combination of tomato and citrus. Since tomatoes are not in season right now I used canned, but if you are making this in the summer by all means use fresh. Of course if it's summer you probably can't find kumquats - it's quite a pickle! I marinated my chicken for 3 hours - I work from home so I have the luxury of being able to take a chicken marinating break at 3 in the afternoon - if you are not so lucky you can start in the morning before (ugh) work for more orange flavor, or right when you get home for a lighter orange essence.
