Veggie lettuce wraps

In my blog (http://naturehealthandyoga.blogspot.com )I am suggesting that we are better off by NOT decrease the alkaline properties of vegetables by cooking them. With that, Increase the intake of mineral-rich foods. <br />While I do not completely disregard the cooking of the vegetables due to the fact that it helps to soften the food, which makes it easier to digest, I stay behind the fact that the raw veggies fall into the class of alkaline food. I have already talked about the mineral deficiency of our foods (mainly due to modern agricultural practices. ) You can see the article on this subject published on here: http://naturehealthandyoga.blogspot.com/2012/06/external-beauty-as-bonus.html <br /> <br />Veggie Lettuce Wraps: <br />Ingredients: <br />2 med tomatoes <br />2 avocados <br />1 /2 large sweet onion <br />2 tbsp crushed raw pumpkin seeds <br />1 cup of shopped parsley <br />Hand full of sprouts (your choice) <br />2 tbsp of lemon juice <br />1 tbsp of raisins <br /> <br /> <br />Sea salt and pepper to taste <br />2 heads of long romaine lettuce <br /> <br /> <br />Directions: Chop all vegetables by the romaine lettuce and mix it in a bowl. Prepare lettuce leaves by separating them into singles. Wrap a hipping tbsp of veggie mix into the lettuce leaves. “Secure” the lettuce leaf by a tooth pick . Top the wraps with the Red Pepper and Cilantro Dressing: <br /> <br />Red Pepper and Cilantro Salad Dressing: <br /> <br /> <br />1 Red Pepper <br />1 cup of chopped cilantro <br />1 tomato <br />2 garlic cloves <br />2 tbsp of lemon juice, 1 tbsp of water <br />Salt and pepper to taste <br />1 tbsp raw apple cider vinegar <br /> <br /> <br />Directions: blend all ingredients until smooth. Good for 2 days in the refrigerator. <br /> <br />
