Watermelon on ice
Not quite an agua fresca or a granita, this summery drink is more like blended fruit on ice. Since we were going for something refreshing to cool us down after a bike ride, we kept it pretty simple--lime juice, watermelon, sugar and ice--but something tells me that, with a splash of limoncello and some lemon juice instead of lime, this could be a nice substitute for a mimosa.
