West indian sunday breakfast (stewed bacalao)
Ragout and stew
I first had this one Sunday morning at a restaurant overlooking English Harbour in Antigua and since have tried various versions on other Caribbean Islands where bacalao (a/k/a salt cod or salt fish) is a celebratory food. Some islands call this dish Stewed Down Salt Fish. <br />We serve it New Year's morning after a long night of partying but is great any time. This recipe is my take on this West Indian spatiality.
