Green tea sōmen

Sōmen are thin Japanese wheat noodles that are often served chilled, with a dipping sauce (mentsuyu), as a cooling meal for the hot weather. You’ll see other kinds of Japanese noodles served this way, with buckwheat soba being one of the more common options. Instead of using plain sōmen for this recipe, I decided to use a brand that had a green tea flavor option because green tea makes me think of spring!
