Marinated pork tenderloin with romesco sauce & cilantro-lime gremolata

It's as much about the pork as it is about the sauce in this dish. The pork is marinated in a combination of cilantro, jalapeno and lime, pan-seared and roasted in the oven. My romesco sauce is the perfect complement: a Spanish sauce made of red bell peppers, tomato, almonds and smoked paprika. The cilantro-lime gremolata adds freshness and echoes some of the flavors in the marinade.
