I love recipes that are inspired simply by a trip to the grocery store. That’s exactly how this beautiful salad came about. Grilled bitter endive and sweet apricots on a bed of baby spinach are drizzled with an apricot mint vinaigrette. Hazelnuts add crunch, and a pinch of smoked salt helps reinforce the smokey, grilled flavor.
