Purists would argue this isn’t a true whoopee pie because it doesn’t have marshmallow fluff, and I’m OK with that! Mine could actually be considered healthy whoopie pies. I’ve found these are best eaten immediately or frozen, because the cake tends to get stale after a day or so.
