Birthday meatloaf

Growing up, I hated when my mom served meatloaf. Fortunately, it wasn't often. Even though Mom is a pretty good cook, the meatloaf always turned out bland and burnt around the edges.

My dad is a big fan of meatloaf and shared this recipe with me a few years ago. This is now one of my favorite meals and believe it or not, I request it for my birthday dinner each year (hence the name). Yes, it's that good!
