My favorite dish to order anytime we eat Mexican food is chile rellenos. I just love them. A pepper, stuffed with cheese, then fried, then topped with more cheese--who could not love it? Is it obvious that I love cheese? I added spinach to the stuffing to make myself feel a little better about eating cheese for supper!
